Craig started his career as restaurant manager of award-winning Japanese restaurant, Yamagen, in Christchurch and soon took on the management of the two additional restaurants at Crowne Plaza Christchurch - Victoria Street Cafe and the Atrium Lobby Bar. For a "change of scenery" Craig moved to Wellington just prior to the September 2010 Christchurch earthquake.


Craig has a strong passion for wine and food and enjoys being able to showcase the best that the Wellington region and New Zealand has to offer.

“The scallops are my favourite dish on our current A Taste of Autumn menu, having them wrapped in pancetta with semi dried tomatoes gives an amazing flavour! I would accompany this with a glass of Man O War Valhalla Chardonnay. It's a well-balanced chardonnay and compliments, without over-powering, the flavours of the dish."


Craig prides himself on ensuring Chameleon provides great service with delicious food that maintains a contemporary feel. “As part of a five start hotel we need to continue to look for innovative ideas and menus to provide our guests.”

“One great aspect of my role is guiding the team to develop their local wine and food knowledge. This means I too have the chance to meet with local winemakers to select our seasonal wine list. Cheers!“

 

 

 

Claudia’s love for hospitality began at a young age; working for pocket money at a
hotel near her home town of Barby, Germany.
This passion motivated Claudia to participate in a two year apprenticeship with Hotel Brackstaetter Muehle where she had the opportunity to work in various hotel departments - her favourite being the Restaurant. “I enjoy meeting and looking after people and being creative in delivering a great restaurant experience.”


After 3 years working in Geisenheim, a beautiful wine growing town in Hessen, Germany, Claudia decided to travel to New Zealand, and the Wellington region in particular, after seeing the Lord of the Rings films.


Like her Manager Craig, Claudia has a strong passion for fine food. “Even though I love wine – my favourite being Champagne, my biggest passion is food. I believe cooking is an art and I have a huge amount of respect for our chefs'. They stand in the kitchen
every day creating delicious meals and provide amazing pieces of art which I am proud to present to our guests.”

“My favourite dish from our current A Taste of Autumn menu has to be the Tafelspitz, not only does it remind me of home, with it’s delicious boiled beef and creamy horseradish sauce, but it is inspired by the Tafelspitz dish in our InterContinental Kitchen cookbook. ”


“2012 is looking to be a great year for Chameleon, we’ve got some great individual
food specials coming up as well as some exciting wine-makers’ dinners.“
