Calabria olives, cherries, freshly baked bread with extra virgin olive oil, dukkah, balsamic,
and salted butter

House marinated dill and kamahi honey gravlax with a yuzu dressing, pea feather salad
and avocado crisps  

Spiced slow cooked free range pork belly on an oriental salad with ginger ice-cream 

Vodka and saffron scented tomato consommé poured at the table with a fresh herb,
olive and tomato tartare   

                                                                                            

Mains

Turkey breast marinated in citrus and filled with a fresh thyme mousse, orange and
star anise confit leg meat, mashed potato and snow peas with gewürztraminer jus
and shaved New Plymouth macadamia nuts 

Roasted groper with slow roasted vine tomatoes, fresh asparagus and jersey benne with
a chive nage 

Whole slow roasted aged beef tenderloin served medium rare with rainbow chard,
broad beans, anna potato, pan juices and chestnut foam 

Chestnut ravioli, beetroot tortellini, swede and carrot agnolotti with asparagus, slow
cooked baby truss tomatoes, sweet pea puree and truffled crème fraiche
